方便面调味料中酱料对方便面风味尤其是特征风味的影响很大,控制好酱料的质量是保证方便面风味稳定的重要一环。采取一些措施对原料检验分级,对酱料炒制的温度、时间、火候进行标准化操作等,可最大限度地保持酱料质量的稳定性。
The sauce of the instant noodles' flavouring can affect the flavour of the instant noodles greatly.A good controlling of the sauce's quality is an important step to guarantee the instant noodles' stability.However,some measures should be taken to grade the raw materials and standard operation on the degree of heating,temperature and time should be carried out when frying the sauce so that the stability of the sauce'quality can be maintain to the maximum limit.
