摘要
为了探讨烹调油烟对人体的潜在致癌性,应用人胚肺二倍体细胞株 K M B- 17 细胞建立体外细胞转化系统,观察烹调油烟冷凝物诱导细胞转化作用。结果表明:试验剂量范围内的烹调油烟冷凝物(50 ~400 μg/ml) 能不同程度地诱导细胞转化,具有明显的剂量反应关系(r = 0 .9936) ,提示烹调油烟对人体具有潜在致癌性。
In order to study the potential carcinogenicity of cooking oil fume(COF)to human,we established the cell transformation system in vitro by using the human embryo lung diploid cell strain. Cells were treated with various concentrations of cooking oil fume condensates (COFC)and the morphologoical transformations that are related to neoplasia were observed after the expression period.The results showed that,to various extents,COFC can induce KMB-17 cell transformation within the limits of the experimental concentration(50~400ug/ml),and that dose-response relationship was obvious(r=0.9936).It also indicated that COFC has potential carcinogenicity to human.
