花生蛋白酶解液的活性炭脱色工艺研究 被引量:13

摘要 水酶法工艺可以同时提取浓香花生油和花生水解蛋白,但由此得到的蛋白酶解液色泽较深.分别使用颗粒和粉末活性炭对花生蛋白酶解液进行脱色处理,发现粉末活性炭更适合于蛋白酶解液的脱色,其脱色最佳条件为:活性炭用量(g/mL)8%,温度55℃,时间30 m in,pH3.2.在此条件下酶解液的脱色率可以达到79.38%,而蛋白损失率为20.86%. Peanut oil and protein hydrolysates could be simultaneously extracted by aqueous enzymatic extraction,but the enzymatic hydrolysate had a deep color. In the paper,we adopted granular and powdered activated carbon to decolorize the enzymatic hydrolysate.The results showed that the powdered activated carbon was better in decoloration,and the optimum conditions were as follows: activated carbon amount 8%(W/V),temperature 55 ℃,time 30 min,pH 3.2.Under these conditions,the decoloration rate was up to 79.38%,and the protein loss was 20.86%.
