X射线荧光光谱及拉曼光谱法研究五谷营养成分 被引量:8

Analysis of Corn Nutritious Components by X-Ray Fluorescence Spectrum and Laser Raman Spectrometry

摘要 采用X射线荧光光谱分析法(XRF)和激光拉曼光谱法(Raman),测定了小米、玉米、黄米、大米和小麦5种常用主食(五谷)中营养成分及钾、镁、钙、铁、锌、锰、铝、铜等多种微量元素的含量。X射线荧光光谱分析法测量结果表明,五谷中所含微量元素非常丰富且种类基本相同,但各元素含量存在很大差异。5种谷类中K元素含量均为最高,含量分别是小米1.17%、玉米0.800%、黄米1.12%、大米0.298%、小麦0.526%。激光拉曼光谱分析测量结果表明,五谷中所含营养成分主要为碳水化合物和蛋白质,碳水化合物的含量远高于蛋白质。探讨了营养元素与生命保健的关系,为人们合理膳食提供一些合理化建议和科学依据。 Five samples of corn including millet,maize,glutinous millet,rice,wheat were analyzed and characterized by X-ray fluorescence spectrum and laser Raman spectrometry.The nutritious components and the contents of K,Mg,Ca,Fe,Zn,Mn,Al and Cu in five samples of common use corn were determined.The corn are rich in microelements,and the varieties are the same,but the content of each element has a quite different.The content of K is the highest in the five samples,millet of 1.17%,maize of 0.800%,glutinous millet of 1.12%,rice of 0.298% and wheat of 0.526%.The main nutritious components of common use corn are carbohydrate and protein according to Raman spectra analysis.The content of carbohydrate is much higher than protein.The relationship between microelements and health protection was studied.The method provides a scientific foundation and rationalization proposal for meals.
