摘要 实践教学是高职院校专业教学的重要组成部分,校内生产性实训基地建设是提高高职烹饪专业人才培养质量和创新创业能力的有效途径,是人才培养模式改革的重点领域和关键环节。本文以浙江旅游职业学院为例,通过对校内生产性实训基地的内涵、基本特征、运作模式的分析,探究基于校内生产性实训基地的烹饪专业人才培养成效。 As a crucial component of higher vocational education,the establishment of on-campus production-simulation training centers is an efficient approach to improve the teaching quality of cuisine students and to enhance their capabilities of innovating and running their own businesses.This is also the key to and the focus of the reforms of the curricular setup.This paper,taking Tourism College of Zhejiang as an example,analyzes the definition,features and working modes of on-campus production-simulation training centers as an exploration into their effectiveness.
