复制酱油是以酱油、糖类和香味物质为原料,经过适当比例搭配,通过一定时间熬制而制成的特色调味品。本文对复制酱油的制作工艺过程进行了研究,以使其色泽、香味、口感、黏度等指标都达到较高标准,既符合人们健康饮食的要求,又能满足各种特色菜点的制作需要。
Compound soy sauce is a seasoning made by mixing and decocting soy sauce,sugar and spices according to a fixed formula.This paper expounds the technology to prepare compound soy sauce which is of high quality in terms of color,smell,taste and viscidity,catering for the demand for healthy food and fulfilling the seasoning function in food preparation.
