耐高温α-淀粉酶是一种重要的工业用酶制剂。概述了耐高温α-淀粉酶的酶学性质、产生菌及其高产菌株的选育,并介绍了其发酵生产以及分离纯化方法等方面的研究进展。
Thermostable a-amylase is an important enzyme preparation in industrial processes. The characters, producing strains and high-yield strains selection of thermostable α-amylase are summarized. The research progress on fermentationproduction and the separation and purification are also provided.
