摘要
窖池老化现象表现为池壁起碱,板结发硬,析出白色晶体,出现异臭味等。防治方法有加大投料量,使窖帽高出地面50cm左右,以保护窖池上部窖壁;增加封窖措施,杜绝空气和杂菌侵入;对老化严重的窖池需重新敷设老窖泥;对老化轻微的采用营养液喷淋窖壁以提高窖池质量。
The ageing phenomenon of the fermentation pit showed that alkaling land was emerged from the wall of the fermentation pit,the wall mud hardened,white crystal separated out and bad smell appeared.The preventive methods are as following:The quantity of material is increased to make the fermenting grain higher about 50cm above ground to protect the upper wall of the fermentation pit.The measure of covering the fermentation pit is enhanced to protect against oxygen and hetero-bacterium entering.The serious aged fermentation pit should be covered the wall with the man-made fermentation pit mud again.The lightly aged one may be spraied with the nutrition liquid on its wall to improve the quality of the pit.
