在啤酒生产中添加α-乙酰乳酸脱羧酶(α-AcetolactateDecarboxylase)可有效地分解α-乙酰乳酸,降低双乙酰含量,抑制双乙酰反弹幅度。加入量为10g/t麦汁,6天左右可将双乙酰还原到0.
In beer brewing,the addition of α-Acetolactate Decarboxylase could effectively decompose α-acetolactate,cut down the content of diacetyl and control the reproduction of diacetyl.The addition quantity is 10g/t wort.The content of diacetyl was reduced to 0.10ppm in six days.
