董酒有三独特,即生产工艺独特,微量成分量比关系独特,风格独特。其香型特征在全国白酒中独树一帜,具有舒适优雅的药香;酯类含量较平衡,表现出复合酯香。丁酸乙酯与己酸乙酯之比高于其他名白酒数倍,乳酸乙酯约为其他名白酒的1/2~1/3;高级醇中正丙醇比其他名白酒高1倍至数倍,仲丁醇高出5~10倍;醇酯比>1,在1∶0.8~1.0,其他名白酒为1∶3以上;酸酯比>1,在1∶0.6~0.8,其他名白酒为1∶2以上。董酒是同类香型白酒的典型代表,应确立为“董型”。
Dongjiu Liquor has a special production technology,special ratio of the trace ingredients and an unique style.The liquor′s flavour feature,which has medicinal herbs aroma,was very special in China′s liquors.Dongjiu Liquor has a balance amount of esters and a complex ester-flavour. The proportion of ethyl butyrate to ethyl caproate is about several times higher than that of other famous liquors, the content of ethyl lactate is 1/2~1/3 of that in other famous liquors, the content of n-propyl-alcohol is one to several times higher,and sec-butyl alcohol is 5~10 times higher than that of other liquors.The proportion of alcohols to esters is 1∶0.6~0.8.It is over 1∶2 in other famous liquors.Dongjiu Liquor is the typical sample among the same flavour liquors.So it should be defined as“Dong-flavour”.
