摘要
应用气相色谱检测技术,对浓香型白酒不同窖龄窖泥微量挥发性成份进行了分析。结果表明:不同窖龄窖泥中微量挥发性成份种类和含量不同;任何窖龄的窖池均是窖壁泥微量挥发性成份种类和含量比窖底泥多;酸类和酯类化合物含量随着窖龄增长而增加,主要增加于窖壁泥。
Application of gas chromatographic detection techniques of luzhou-flavor liquor,pit mud pits different age trace volatile ingredients are analyzed.The results indicate that the different pit mud pits age trace volatile components in different varieties and contents;Any cellar cellar pool are age trace volatile kiln wall mud pits types and levels than components sediment many;Acids and esters content increases with age,pits in major increase mud pits wall.
