盐提与膜分离偶联制备双低油菜籽蛋白 被引量:2

摘要 以双低油菜籽饼粕为原料,采用盐提与膜分离偶联工艺制备菜籽蛋白,结果表明,盐提温度及浓度是影响盐提工艺重要因素,盐提最佳条件为:4.0%NaCl,50℃,90min,料液比(w/v)1:20,在最佳艺条件下,菜籽蛋白提取率达67.9%;超滤膜分离适宜工艺条件为:超滤膜MWCO100000,物料初始蛋白质浓度为4.0%,料液pH10.0,超滤操作温度为50℃,进出口压差0.12MPa,在此条件下,菜籽蛋白截留率>90%,产品蛋白质纯度为85.11%。采用盐提与超滤偶联处理菜籽饼粕,可得到高纯度菜籽蛋白,同时大幅度降低产品抗营养因子。 The Extraction of protein from double-low rapeseed by coupling salty solution and membrane separation was investigated. It was shown that extraction temperature and salt concentration had great effects on extraction rate of rapeseed protein; And the optimum process parameters were as followed: 4.0% NaCl, 50 ℃, 90 min, ratio of material vs water(w/v)1:20. The extraction yield of 65.6% were obtained under the above conditions. The suitable process conditions of membrane separation were: MWCO100 000, 4.0% initial protein concentration, operation temperature 50 ℃ and operation pressure difference 0.12 MPa; And under the conditions,the withholding rate of rapeseed protein was above 90% and the protein content in protein powder was 85.11% respectively. With the utilization of coupling salty solution and membrane separation, high pure rapeseed protein was acquired; Also, anti-nutritional factors were significantly reduced in the rapeseed protein product.
