概述了大曲微生物的类型及研究开发与应用现状,并对其发展前景进行展望,旨在为大曲微生物的研究提供思路,进一步从微生物的角度揭示中国白酒的发酵本质。
The groups of Daqu microbes and their current research and development prospects were summarized in this paper. In addition, Daqu microbes and Chinese liquor fermentation were introduced.
