摘要
以菏泽牡丹为材料,对牡丹雄蕊的营养成分和抗氧化能力进行分析。结果表明,牡丹雄蕊中K、Ca、Mg、P、Se等元素、碳水化合物、不饱和脂肪酸、VE含量较高,氨基酸含量丰富,蛋白质质量较高;雄蕊具有较强的抗氧化能力,乙醇提取物的能力最强。牡丹雄蕊是一种具有良好开发前途的天然保健食品资源。
The nutritional components and antioxidant activity were analyzed in stamen of peony.Results showed that contents of protein,K,Ca,Mg,P,Se,carbohydrate,tocopherol were high in peony stamen and peony stamen was rich in amino acid and protein value was high.In addition,penoy stamen possessed high antioxidant activity and ethanol extract was the most efficient,which indicated that peony stamen was a promising source of natural healthy food.
