A Melting Pot’s Spicy Hotpots 1Have you ever tried Sichuan’s well-known spicy hotpot？ While a large metal pot sits over the flames of a gas burner at the center of the dining table, various plates of meat, vegetables, mushrooms, and seafood are emptied into the simmering spicy soup stock. Pieces of the cooked food are retrieved from the pot and eaten after being dipped in sesame oil sauce. Because the stock is filled with red peppers, the hotpot is also called a ＂red pot＂.
