摘要 肌肉中肌原纤维包含肌肉收缩的基本结构单位。蛋白按照其在肌肉中的性质又可以分为三大类,包括直接参与肌肉收缩的蛋白,调节肌肉收缩的蛋白及细胞骨架蛋白。主要论述了调节蛋白和细胞骨架蛋白的种类、性质、作用以及对肉品质量的影响。 Myofibrils of muscle contain the basic structural units responsible for muscle contraction and relaxation in living animals.There are three kinds of myofibrillar proteins,namely,contractile proteins,regulatory proteins and cytoskeletal proteins.The properties and roles of regulatory and cytoskeletal proteins in muscle,and their influence on fresh meat product quality were reviewed in this paper.
