摘要
论述了食品抗氧化能力体内和体外检测的方法。重点介绍了二苯代苦味酰基自由基(DPPH·)法、ABTS法、硫代巴比妥酸(TBARS)法、Fe3+还原能力(FRAP)法、氧自由基清除能力测定法(ORAC)的机理以及在食品领域中的应用,探讨了食品抗氧化检测方法的相关性和标准化问题,为选择合适的抗氧化方法提供参考。
In vitro and in vivo detection methods of food antioxidant activity were summarized.The mechanism and application of detection methods such as DPPH·,ABTS,TBARS,FRAP and ORAC were introduced.The correlations and standardization of detection methods were discussed.This research would provide a reference of choosing antioxidant activities detection method.
