免疫增强型黑色营养膳的营养评价及其作用研究

摘要 将黑黏米、黑豆、黑芝麻经发芽、破碎、挤压膨化、微波灭菌等工序加工成营养膳,按国标规定检测其营养成分含量。将营养膳添加入基础饲料,以20、40、60 g/kg bw3种剂量给予昆明种小鼠。连续喂养30 d后,观察其对小鼠各项免疫功能指标的影响。结果表明以黑黏米、黑豆、黑芝麻为主要原料加工制成的营养膳中蛋白质质量分数达到25.44%,脂肪18.81%,此外维生素和矿物质均较高,8种必需氨基酸均高出WHO/FAO模式标准。在免疫调节试验中,营养膳能增强小鼠的胸腺指数和脾指数,提升淋巴细胞刺激指数和小鼠NK细胞活性,提高腹腔巨噬细胞的吞噬功能和溶血素含量,其最适作用剂量为40 g/kg bw。 A kind of paste was made from black rice, black soybean and black sesame through extruding,blending and grinding to detect its nutrient contents with the national standards. And then, Kunming mice were used to detect the effects of the black health nutrition paste on immune activities ( black health nutrition paste was added in the feed) with different nutrition paste dosages (20 g/kg bw,40 g/kg bw,60 g/kg bw) for 30 days,and then their immune functions were studied. The measured items included immune organ weight and hemoglobin amount analysis with chicken red blood cell as immune source. The results showed that the vitamins and minerals of black health nutrition paste processed mainly from black rice, black soybean and black sesame were relatively high. The contents of protein and fat were 25.44% and 18.81% respectively, and 8 essential amino acids higher than WHO/FAO model. In the immune experiment, black health nutrition paste had the function to increase spleen and thymus index, promote the a- bility of carbon clearance, NK cell activity and phagocytic function of macrophage cell and hemoglobin amount. The optimal dosage of nutrition paste was 40 g/kg bw.
