摘要
利用高压静电场对生酱油进行处理,对处理过的酱油进行香气成分、氨基酸、理化指标的分析表明:高压静电场既可改善酱油的色、香、味。
The raw soy is treated with high voltage electrostatic field. The composition of flavour, amino acid, physical and chemical targets in the soy are analysed. Results indicate that high voltage electrostatic field can iprove the colour, the flavour and the taste, and can also kill the germs in the soy.
