牛油基起酥油起砂原因及改善探讨 被引量:3

摘要 牛油基起酥油由于留香持久、风味厚实广泛应用于焙烤工业,但直接使用牛油,产品在储运过程中,由于温度波动有产生砂粒的危险,从而引起产品品质改变。本文从牛油理化性质及其在起酥油中应用特性出发,总结了近年来国内外关于起酥油起砂现象的研究结果,并提出防止牛油基起酥油起砂的改性方法。
