食品中桔霉素的酶联免疫分析方法研究进展 被引量:1

摘要 综述了桔霉素的理化性质、其在食品中的存在及危害、酶联免疫方法的基本原理及食品中桔霉素的酶联免疫吸附分析方法的研究现状,重点介绍了桔霉素人工抗原的合成方法,抗桔霉素抗体的制备原理,以及桔霉素的酶联免疫吸附分析方法的建立. The physicochemical property, presence, and the harm to human health of citrinin, priciple of ELISA and the status of the determination of citrinin in food by ELISA were reviewed in this paper. Synthesis of the antigen, production of the antibody and development of ELISAs for citrinin were introduced in detail.
