大学生营养状况调查分析——脂肪摄入量问题研究

摘要 应用食物频数问卷法对200名男女大学生进行为期半个月的膳食调查,以膳食脂肪摄入量、脂肪供能比、脂肪食物来源作为评价大学生脂肪摄入状况的指标。结果显示,脂肪提供能量在总热能中所占比例适当,男生为20.21%,女生为21.93%;肉蛋类提供的脂肪含量过高,其中男生60.98%,女生52.16%;水产品提供的脂肪含量偏低,男生为9.58%,女生为7.69%。膳食脂肪构成不是很合理,缺乏多不饱和脂肪酸和脂溶性维生素。 This dietary investigation used the method of questions and answers,the sample was 200 college boys and girls which lasts for half a month.The standard of the evaluate of college students' dietary fat intake is based on the amount of dietary fat intake,the proportion of energy which comes from fat and the origin fat of food.The results show that,the proportion of the energy which from fat is well-fitted.The energy which from meat and egg is higher than the standard,but the energy from fish is a bit low,the constitution of dietary fat is not so reasonable,vitamin A,D,E,K intake and polyunsaturated fatty acid intake were in low level.
