中国烹饪教育的主要历史沿革

摘要 从原始社会人类的茹毛饮血到现在酒店餐馆的饕餮盛宴,可以看出我国烹饪的根基深厚、历史悠久。中国烹饪教育是随着人类社会的发展和烹饪知识、技艺、经验的累积而逐渐形成的,它伴随着烹饪技术的发展而发展。本文以中国烹饪教育的产生为出发点,综述中国烹饪教育在不同社会历史时期所表现出来的形式,并由此展望新世纪中国烹饪教育的发展前景,试图在"主要历史沿革"这一层面勾勒出中国烹饪教育的成长画面。 from the life of eating raw birds and animals in the primitive society to feasts in the hotels or eateries nowadays,we could see that Chinese cooking has a profound foundation and long history.Cooking education of china gradually emerged and grew with the development of human society and the accumulation of experience;it advances as the cooking techniques advance.This paper begins with the emergence of Chinese cooking education,summarizing the forms of cooking education in distinct historical periods and predicting the prospects for Chinese cooking education in the new century.We try to draw painting that pictured appearances by the major historic evolution.
