餐饮业现榨饮料加工现状及管理对策 被引量:8

Fresh-Squeezed Beverage Processing in Catering Industries and Management Measures

摘要 目的了解温岭市现榨饮料的加工现状,以探索有效监管对策。方法抽查42家不同类型的餐馆进行卫生学调查及样品检测。结果加工过程中存在不卫生问题,如现榨专间配备率只有28.6%,榨汁机使用前消毒率只有9.5%,现榨饮料微生物指标检测总合格率为30.9%,其中中小型餐饮单位的合格率为13.2%,现榨果蔬汁的合格率只有12.2%等。结论现榨饮料加工过程存在严重污染,其卫生状况堪忧,食品卫生监督管理部门需加强对餐饮企业的监管。 Objective To understand drinks processing status of fresh squeezed beverage in Wenling city and to explore effective regulatory measures.Methods Forty-two restaurants of different types were selected for hygienic survey and the samples were examined.Results There were some unhygienic problems in machining process,such as only 28.6% of them have special room for squeezing juice,only 9.5% of juice extractors being sterilized before using,total qualified rate of microorganic indicators is only 30.9% in fresh juice,13.2% of that for middle and small catering units and only 12.2% in fresh squeeze juice.Conclusion There was serious pollution in the squeezing beverage processing.Food hygienic and administration departments should strengthen supervision for catering enterprises.
