摘要
介绍了微冻技术贮藏保鲜的原理,综述了微冻保鲜技术在动物性食品贮藏保鲜上的研究及应用现状,并对微冻技术用于动物性食品保鲜进行了展望。
The principles of superchilling technology were introduced in this paper.After that,it reviewed the development of superchilling technologies for animal derived food storage and fresh-keeping.The unresolved problems of superchilling technology applied in animal derived food were pointed out and a prospect of the application of superchilling technology was analyzed.
