摘要
研究比较了木糖-甘氨酸美拉德反应蓝色产物与末期美拉德反应产物、原花青素以及山楂黄酮的抗氧化能力;用MTT法来评价了蓝色产物对人宫颈癌Hela细胞和人肝癌Hep-G2细胞的细胞毒性。研究结果表明:木糖-甘氨酸美拉德反应蓝色产物对ABTS自由基的清除能力,随着反应产物浓度的增大而逐渐增大。当浓度为3.2mg/mL时,其自由基清除率达到了98.5%。与末期反应产物、原花青素和山楂黄酮相比较,蓝色产物的自由基清除能力较弱。该蓝色产物在Hela细胞和Hep-G2细胞上均未见细胞毒性。
The antioxidant ability of the blue Maillard reaction products(bMRPs) formed in the xylose-glycine Maillard reaction system at the early stage was investigated,in comparison with those of the MRPs formed at the late stage.Moreover,cytotoxicity of the blue MRPs on Hela and Hep-G2 cells were assessed by MTT assay.The results have shown that the ABTS scavenging rates increased with increasing bMRPs concentration.The ABTS scavenging rate reached 98.5% at the concentration of 3.2 mg/mL.The ABTS scavenging capability of bMRPs was relatively low,compared with the late-stage MRPs,oligomeric proantho cyanidins and hawthorn flavonoid.At the effective concentration range for antioxidant activity,no cytotoxicity was observed on human Hela and Hep-G2 cells.
