Pit mud is closely related to the production ofLuzhou-flavor Daqu liquor. Pit mud quality is an important decisive factor of the quality of Luzhou-flavor Daqu. In this paper, appropriate culture and maintenance measures of pit mud in different period in the production process of Luzhou-flavor liquor were introduced. Scientific cognition of the aging, culture and maintenance of pit mud is the prerequisite to achieving appropriate culture and maintenance of pit mud and further enhancing liquor quality and liquor yield.
