摘要
在分析我国人群营养状况的基础上,根据我国人民的传统饮食习惯,结合现代人体营养科学特点,深入研究影响小麦加工因素。从种质资源及栽培条件研究加工品质,可为育种工作选择杂交亲本,为食品工业选配原料提供依据。
The affecting factors of processing wheat were deeply studied on the basis of the nutritional conditions of Chinese people, according to the traditional food custom and combining the characteristics of nutritional science. The processing quality was studied from the seed sources and caltivating conditions of wheat. This had provided a basis for seed selecting crossbreeding and selecting raw materials for the food industry.
