摘要
利用丰富的苹果原料 ,全汁发酵而成的苹果酒 ,属果酒。就干型、半干型苹果酒的研制、开发过程进行了论述 。
Cider,which is fermented with pure apple juice by using abundant apple resource,belongs to fruit wine.The development of dry and semi-dry cider,as well as a series of praticable manufacturing process for fermented apple wine was described in this article.
