从吴宪到郑集——我国近代营养学和生物化学的发展 被引量:6

摘要 民国初年近代营养学传入中国,1925年以后,以吴宪为代表的本国营养学家,开展了自己的营养调查和相关研究。吴宪在1931年提出的"蛋白质变性学说"是中国人在世界生物化学领域内的杰出表现。比吴宪稍晚的郑集,也是中国杰出的营养学家和生物学家,他是目前已知道的世界上最长寿的大学教授,他的科学活动在时间上与吴宪基本衔接,尤其是在营养学和生物化学教育方面,体现了没有师从关系的传承链节。了解吴宪和郑集的科学活动,实际上就是掌握了二十世纪中国营养学和生物化学的发展史。郑集教授品格高尚,淡泊名利,他的长寿记录说明了健康的生活方式、平和的心态以及合理的膳食的重要性。 In the early Republic era, modem nutriology was introduced into China. Since 1925, native nutritionists represented by Wu Xian initiated relevant research in nutrition. Protein Denaturation Doctrine suggested by Wu Xian in 1931 is an outstanding achievement made by Chinese people in biochemistry. Zheng Ji,later than Wu Xian, is another distinguished nutritionist and biologist, and is present known the most long-lived university professor. His activities in science are timely link to Wu Xian's work, especially in nutriology and biochemistry education, which embodies a inheritance between people without master-apprentice relations. Knowledge of the scientific activity of Wu Xian and Zheng Ji is actually a good mastery of the development history of Chinese nutriology and biochemistry in the 20th century in China. Professor Zheng Ji is a man of noble character and indifferent to fame and wealth. His longevity indicates the importance of healthy life style, peace of mind and balanced diet.
