摘要
对雪峰乌骨鸡3个亚群体和杂交培育的乌骨鸡群体(黑色丝羽)屠宰后取其胸部肌肉,进行蛋白质、氨基酸和矿物元素含量的测定和比较分析,结果表明:4个亚群体间不同羽色、不同性别的乌骨鸡胸肌蛋白质和氨基酸含量差异不显著,所测定的16种氨基酸中相对含量较高的是谷氨酸(3.297%~3.673%),天门冬氨酸(2.985%~3.150%)和赖氨酸(2.271%~2.587%)。培育乌骨鸡品系胸肌蛋白质和Ca含量高于雪峰乌骨鸡。
The contents of breast muscle protein, amino acids and mineral elements were determined and analysed in chickensrandomly sampled from 3 subpopulations of Xuefeng black- boned chickens(white feathered, yellow feathered and black feathered)and Heifeng silky chicken (bred by crossbreeding). The reults indicated that in the contents of breast muscle protein and amino acidsno significant difference were found between four subpopulations or between males and females. Among the contents of 16 aminoacids, glutamic acid(3. 297% ~ 3. 673% ) ranked firstly, followed by aspartic acid (2. 985% ~3. 150% ) and lysine(2. 271%~2. 587% ). The contents of breast muscle protein and Ca in Xuefeng silky chicken were higher than those in xuefeng black- bonedchickens.
