随着日益增长的需求，我国变性淀粉工业仍以较快速度发展，变性淀粉新品种不断出现，变性淀粉应用领域进一步拓展，变性淀粉产量逐年增加，2010年变性淀粉产量已达到135万吨左右。这些对促进淀粉深加工，提高其附加值；满足工业应用需要，改善应用领域的工艺过程，提高应用领域的产品质量起到了积极的作用。
