摘要
以沙果为原料,采用酶化学法研究了原料中不溶性膳食纤维的制备工艺.采用单因素试验分别从糖化酶加酶量、酶解时间、碱解pH、碱解温度和碱解时间筛选出影响显著的因素,通过正交试验确定了沙果中不溶性膳食纤维(insoluble d ietary fiber,IDF)提取工艺的最佳条件.研究结果表明,沙果中IDF提取的最佳工艺条件为:糖化酶加酶量为0.6%(g/g),酶解温度为60℃,酶解时间为90 m in,碱解pH为10,碱解温度为50℃,碱解时间为90 m in.
Malus asiatica was used as raw materials by enzymatic and chemical methods to obtain the preparation technology of water insoluble dietary fiber.Optimum conditions for extracting the water insoluble dietary fiber in the raw materials were confirmed through orthogonal tests.The results showed that optimum condition of the malus prunifolia was as follows:0.6% glucoamylase with reaction temperature of 60 ℃,hydrolysis time of 90 min,pH 10 alkali with hydrolysis temperature of 50 ℃ and hydrolysis time of 90 min.
