摘要
采用旋光法研究了CTAB、SDS、TritonX100等3种类型OW微乳液介质中蔗糖的水解反应,测定了不同微乳液体系中蔗糖的表观水解反应速率和表观水解反应活化能.结果表明,蔗糖在OW微乳液中的表观水解反应速率较纯水中有所降低,OW微乳液能抑制蔗糖的水解反应。
The hydrolysis of sugar in the O/W microemulsion of CTAB, SDS and Triton X100 has been studied by optical method. The velocity and the activation energy of hydrolysis of sugar in various media has been calculated. The velocity of hydrolysis in different surfactant O/W microemulsion is lower than that in water. The results show the O/W microemulsion has inhibition to the hydrolysis reaction of sugar, and this inhibition has the minimum value at certain temperature.
