摘要
目的建立肉制品中诱惑红的高效液相色谱测定方法。方法样品中的诱惑红色素经提取后在酸性条件下被聚酰胺粉吸附,在碱性条件下解吸附,以甲醇—0.02 mol/L乙酸铵溶液为流动相,梯度洗脱,C18柱分离,紫外检测器检测,波长254 nm,以相对保留时间定性,色谱峰面积定量。结果浓度与峰面积线性关系良好r=0.999 5,回收率90.0%~93.7%,相对标准偏差在1.25%~1.82%之间,最低检出浓度为0.001 g/kg。结论该方法操作简便、灵敏、准确,适用于肉制品中诱惑红、柠檬黄、胭脂红、日落黄等色素的同时检测。
[Objective]To establish the method for dectecting Allura Red in meat products by High Performance Liquid Chromatography(HPLC).[Methods]Allura Red was adsorbed by polyamide powder after extraction under acidic conditions,desorption in alkaline conditions,methanol-0.02 mol/L ammonium acetate as the mobile phase gradient elution for gradient elution,C18 column for separation and UV detector for detection,with wavelength 254 nm,the relative retention time was qualitative,chromatographic peak area quantification.[Results]The linear relationship was good r=0.999 5,recovery of 90.0% to 93.7%,relative standard deviation between 1.25%~1.82%,the lowest detectable concentration was 0.001 g/kg.[Conclusion]The method is simple,sensitive and accurate for simultaneous detection of Allura Red,lemon yellow,carmine,sunset yellow and other pigments.
