摘要
阐述了制粉技术发展历史:生产技术的发展,光辊的历史,现代辊式磨粉机制粉流程的基型和小麦碾皮制粉的发展。摘要和分析了研细系统采用光辊和齿辊对比试验的结果;现代制粉专家对光辊效果的评价。最后提出了几点商榷意见。
The development history of flour milling technology was described: the development of production technology,the history of smooth roll,the basic form of flour milling processes with the modern roller mills and the development of wheat milling after debranning. The results of comparative test for fine grinding system with smooth rolls and fluted rolls were analyzed and the evaluation of smooth roll effects from moderm flour milling specialists was introduced. Finally,several points to be discussed were presented.
