摘要
对不同发芽状况的小麦面粉进行和面仪测定。结果表明:随发芽时间延长,和面时间缩短,峰高和7 min尾高降低,7 min 尾宽变窄。弱面筋品种受发芽时间影响比强面筋品种敏感。
Mixogram of several common wheat varieties with the different germination level was analysed. The results showed that as the germination time increased, the mixing time,peak height at the seventh minute of mixogram decreased,the mixogram width at the seventh minute reduced. The wheat varieties with weak gluten were more sensitive to the germination time than those with strong gluten.
