都市菜品与乡村菜品是我国餐饮菜品的两大支柱.自古以来,都市菜品在地区乃至全国一直具有先锋和带头作用,但它又离不开乡村菜这个根本.都市菜品的优长,在于它善于吸收、善于变化,以适应不同时代、不同地域、不同阶层的人群.随着社会的发展和中外交流的频繁,都市菜品一方面将向“国际食都”发展,但另一方面,都市菜品的风味特色也将逐渐减弱.
