摘要
以豆渣为原料,辅以芝麻提取液及其它辅料,研制出一种新型饮品———豆渣纤维饮料。结果表明,添加6% ~8% 的豆渣纤维粉,0.05% 海藻酸钠+0.05% 果胶复合稳定剂,所得制品品质和稳定性最好。
With the soy-bean residue as the major crude material and the aqueous extracts of sesame and other additives as adjuvants ,a new kind of health drink can be developed . The studies showed that the drink adding 6%~8%powder fiber of soy-bean residue ,0.05%sodium alginate and 0.05%pectin has a high quality and stability.
