摘要
以豆渣为原料，辅以芝麻提取液及其它辅料，研制出一种新型饮品———豆渣纤维饮料。结果表明，添加６％ ～８％ 的豆渣纤维粉，０．０５％ 海藻酸钠＋０．０５％ 果胶复合稳定剂，所得制品品质和稳定性最好。
With the soy-bean residue as the major crude material and the aqueous extracts of sesame and other additives as adjuvants ,a new kind of health drink can be developed . The studies showed that the drink adding 6%～8%powder fiber of soy-bean residue ,0.05%sodium alginate and 0.05%pectin has a high quality and stability.
