不同茶树良种加工祁红香螺的品质比较研究 被引量:8

摘要 以‘祁门槠叶’为对照,选取‘安徽1号’、‘安徽3号’和‘凫早2号’3个国家级无性良种为试验对象,按照相同采制标准制成祁红香螺茶样,通过对主要生化成分测定结果和感官审评的比较,研究不同茶树品种对祁红香螺品质的影响。结果表明:3个无性良种茶样的内含物质丰富,生化成分比例协调;形美质优,感观审评5项因子的综合评分皆高于对照,得分从高到低依次为‘凫早2号’、‘安徽3号’、‘安徽1号’‘、祁门槠叶’,说明3个国家级无性茶树良种均可作为生产祁红香螺的选用品种,尤其以‘凫早2号’、‘安徽3号’为宜。 To research the different quality of Qihongxiangluo tea made from different tea varieties, 3 national elite asexual tea varieties,‘Anhui1’,‘Anhui3’and‘Fuzao2’were investigated using‘Keemun Chuye’ sexual variety as check. In this research, the main biochemical compositions were analyzed and the tea sensory was tested. All the tea samples were collected and prepared with the consistent standards. The results showed that the main biochemical compositions of tea made from 3 asexual elite tea cultivars which had graceful appearance and high quality were richer and better-proportioned than tea made from‘Keemun Chuye’sexual variety. The score of sensory tests was ranged from high to low as following order as‘Fuzao2’,‘Anhui3’and ‘Anhui1’. The results indicated that 3 national elite asexual tea varieties were suitable for Qihongxiangluo tea, especially‘Fuzao2’and‘Anhui3’.
