摘要
对纤维素酶提取绿茶茶多酚的工艺流程进行研究。结果表明,在浸提一次后的绿茶渣中添加纤维素酶处理效果较好,绿茶茶多酚的提取率上升到14.17%。通过单因素及正交实验得到纤维素酶提取绿茶茶多酚的最优工艺条件为:纤维素酶用量0.20g,pH=4.8,酶解温度55℃,酶解时间60min。优化条件下,绿茶茶多酚提取率可达到18.38%,为浸提法的2.12倍。
The technical process of extraction of tea polyphenols (TP)from green tea by using cellulase was investigated.The results showed that the effect by adding cellulase into the extracted pomace of green tea was better.On this condition, the extraction rate could reach 14.17%.On basis of single factor and orthogonal experiments,the optimum conditions as follows :the amounts of cellulase was 0.20g,the pH of extracting media was 4.8,the enzymolysis temprature was 55℃, the enzymolysis time was 60min. Under the optimum conditions, the contents of TP from green tea could reach 18.38% by cellulase,which was 2.12 times than that by chemical method.
