免疫初乳与双歧杆菌复合微胶囊保护剂的筛选 被引量:3

摘要 以双歧杆菌发酵免疫初乳,然后采用真空冷冻干燥技术研制成冻干粉,并以冻干粉为芯材、以肠溶材料欧巴代为壁材,采用空气悬浮微胶囊化的方法制成免疫与微生态双活性肠溶制剂。加工过程中加入菌体保护剂,通过单因素试验和正交试验确定微胶囊的保护剂的最佳配方为:海藻糖添加量为6%,水解酪蛋白添加量为6%,乳化剂Span80添加量为3%。得到的微胶囊中活菌数为6.0×108CFU/mL,存活率可达18.2%,比未添加保护剂的对照组活菌存活率提高了16.8%。 Immune colostrum was fermented by Bifidobacterium adolescentis and then subjected to vacuum freeze-drying to obtain freeze-dried powder.The prepared freeze-dried powder was used as the core material and CAP Opadry was used as the wall material to prepare an enteric-coated preparation with both immune and microbial activity by an air suspension microencapsulation method with the addition of protectant.The optimal protectant composition for improved viable Bifidobacterium adolescentis count was determined by single factor and orthogonal array design to be trehalose of 6%,hydrolyzed casein of 6%,and emulsifier Span80 of 3%.The viable bifidobacteria count in the obtained microcapsules was 6.0 × 108 CFU/mL and the survival rate of bifidobacteria was 18.2%,which exhibited an increase of 16.8% when compared to the control with the addition of protectant.
