屠宰场生猪主要细菌学指标的调查研究 被引量:3

摘要 应用国标法对某定点生猪屠宰场20份生猪胴体体表样品及20份胴体肉样进行菌落总数、大肠菌群、沙门氏菌及金黄色葡萄球菌的检测。结果显示,生猪胴体体表菌落总数和大肠菌样的超标率分别为20%和5%,生猪胴体肉样菌落总数和大肠菌群的超标率分别为5%和0;生猪胴体体表样品和肉样沙门氏菌检出率分别为5%和0;胴体体表及肉样中均未检出金黄色葡萄球菌。结果表明,该屠宰场生猪的卫生质量达标率相对较高,但仍需进一步改善屠宰生产加工水平。 Based on the criteria of national standards,20 surface samples of pig carcass and 20 meat samples of pig carcass from a fixed-point pig slaughterhouse were collected for detecting total number of bacterial colony,coliform bacteria,Salmonella spp.,Staphylococcus aureus.The results demonstrated that the over-standard rates of the total number of bacterial colony and coliform bacteria on the surface of pig carcass were 20% and 5% respectively.The over-standard rates of the total number of bacterial colony and coliform bacteria in meat samples of pig carcass were 5% and 0 respectively.The detection rates of Salmonella spp.on the surface of pig carcass and in meat samples of pig carcass were 5% and 0 respectively.And Staphylococcus aureus was not detected in both carcass surface and meat samples.The results showed that the qualification rate of hygiene quality in this slaughterhouse was relatively higher.But it is necessary to further enhance the levels of slaughter production and processing.
