2009年龙岩市部分食源性致病菌污染状况调查 被引量:3

摘要 [目的]了解龙岩市食品中沙门菌、单核细胞增生李斯特氏菌、EHEC O157∶H7、金黄色葡萄球菌和副溶血性弧菌的污染与分布状况,为预防和控制食源性疾病提供科学依据。[方法]根据食品污染物监测项目规定的采样地点,按2008年国家食源性疾病监测网络工作手册,采集不同包装不同厂家等具有代表性的样品,依据国标方法,对生肉和水产品分别进行沙门菌、单核细胞增生李斯特氏菌、EHEC O157∶H7、金黄色葡萄球菌和副溶血性弧菌分离培养、生化及血清学鉴定。[结果]检测生肉、熟肉制品、熟制速冻米面制品、冰激凌、果汁、食用冰、奶茶、牛奶和动物性水产品9类样品共194份,共检出致病菌28株,总检出率为14.4%。其中金黄色葡萄球菌21株,检出率10.8%;沙门菌4株,检出率2.1%;副溶血性弧菌3株,检出率1.5%。EHEC O157∶H7和单核细胞增生李斯特氏菌均未检出。9类食品中致病菌检出率最高的是牛奶(37.0%),其次为熟肉制品(16.3%),冰激凌、果汁、奶茶中未检出致病菌。[结论]龙岩市居民主要消费食品存在食源性致病菌污染,其中牛奶和熟肉制品是主要污染食品,金黄色葡萄球菌是主要污染菌(检出率分别为37.0%和16.3%);生肉中沙门菌检出率较高(12.0%),主要血清型为德尔卑沙门菌;水产品检出副溶血性弧菌(11.1%),同时存在沙门菌污染。 [Objective]To investigate the pollutions and the distributions of Salmonella species,Listeria monocytogenes,Escherichia coli O157∶H7,Staphylococcus aureus and Vibrio parahaemolyticus in food in Longyan city,so as to provide the scientific basis for prevention and control of the foodborne diseases.[Methods]Based on the GB code method,isolated culture,the biochemistry and the serology appraisal were carry out on the Salmonella speices,the Listeria monocytogenes,the EHEC O157∶H7,the Staphylococcus aureus and the Vibrio parahaemolyticus respectively from the raw meat and the aquatic product samples.[Results]28 strains of pathogenic bacteria were detected from nine kinds of foods in 194 samples,including raw meat,cooked meat product,quick-frozen flour and rice products,ice cream,edible ice,milk tea,milk and animalistic aquatic product,the total positive rate was 14.4%;and 21 strains of staphylococcus aureus were detected,the positive rate was 10.8%,4 strains of Salmonella species,the positive rate was 2.1%,3 strains of Vibrio parahaemolyticus,the positive rate was 1.5%.None of EHEC O157∶H7 and Listeria monocytogenes were detected.In nine kinds of foods the pathogenic bacteria detection rate was highest in milk(37.0%),followed by cooked meat product(16.3%),in the ice cream,the fruit juice,the milk tea no pathogenic bacteria were detected.[Conclusion]There are foodborne pathogenic bacteria pollutions in the main foods among Longyan residents,the milk and the cooked meat product are the main pollution food varieties,the staphylococcus aureus is the main contamination(detection rate respectively is 37.0% and 16.3%);In the raw meat,salmonella disease carrier rate is high(12.0%),the main serogroup for salmonella derby;in the aquatic product,the Vibrio parahaemolyticus(11.1%) was detected,simultaneously with the salmonella' s pollution.
