摘要
[目的]为鸡腿菇多糖的生产提供有益的参考,拓宽鸡腿菇的食品应用价值。[方法]在单因素试验的基础上进行正交试验,确定酶解法提取鸡腿菇多糖的最佳工艺条件。[结果]温度、pH和水解时间3个因素对酶解法提取鸡腿菇多糖的影响依次为温度>水解时间>pH,但差别不大。鸡腿菇多糖提取的最佳工艺条件为:水解时间3.5 h,温度30℃,pH 3.0,纤维素酶1.0%。在该最佳方案下,鸡腿菇多糖提取率为17.1%。[结论]优化了酶解法提取鸡腿菇多糖的工艺。
[Objective] The useful reference for the production of polysaccharides from Coprinus comatus was provided through the research,which would widen its application value in food industry.[Method] The optimum condition of the polysaccharide extracted from Coprinus comatus with the method of hydrolysate was determined through the orthogonal experiment based on the single factor test.[Result] The result indicated that the order of the factor affecting its extracting efficiency was temperature time pH value and the optimum condition was the time was 3.5 hours,the temperature was 30℃,the pH value was 3.0 and the application amount of cellulose was1.0%,under which condition,the extracting rate of polysaccharides was 17.4%.[Conclusion] The method of polysaccharide extracted from Coprinus comatus was optimized.
