摘要
为了充分利用贝壳资源,对鲍鱼壳中水溶性色素进行了研究。研究结果表明,鲍鱼壳水溶性色素有较好的耐热性、耐酸碱性、耐还原性,在自然光照或无光条件下能稳定存在,并能与Cu2+、Ca2+、K+、Mg2+共存。但是,氧化剂可使其逐渐褪色,紫外光照会影响其稳定性,并且不能与Fe3+共存。因此,鲍鱼壳水溶性色素具有成为功能性色素添加剂的潜力。
To use the shells sufficiently,the water solubling pigment extracted from abalone shells was investigated in this paper.The results showed that it could well endure heat,light,acid and alkaline medium,as well as reductants,and could exist with Cu2+、Ca2+、K+、Mg2+.But oxidant and ultraviolet rays could fade it,and it would deposite with Fe3+.Therefore,the water solubling pigment extracted from abalone shells may be a potential functional pigment additive.
