摘要
介绍了国内外对水产品中SSO的研究状况,分析比较了当前确定SSO各种方法的优缺点,重点介绍了非培养分子技术——PCR-DGGE在确定SSO方面的应用;在此基础上,总结了预测特定腐败菌生长的各种动力学模型并对其改进方向进行展望,旨在为完善水产品保鲜理论提供参考依据,为开发靶向抑制SSO新技术、建立适合水产品加工和流通的冷却链提供指导。
The review presents an overview of current study of SSO in aquatic product,including home and aboard.The advantages and limitations of confirming SSO methods were assessed and PCR-DGGE,one of non-cultivation molecular technologies was introduced.Based on this,the kinetic model of predicting SSO were summarized and the amelioration was prospected in order to improve the refreshing theory of aquatic product and provide the direction for development of new technology of controlling SSO and establishment of cold chain for process and circulation of aquatic product.
