摘要
茶叶在自然萎凋过程中,苯丙氨酸解氨酶活性的高峰出现在采摘后12小时,活性上升幅度以福鼎最高,为鲜叶的1.58倍;云南大叶最低,为鲜叶的1.28倍。发酵期间,其活性只有鲜叶活性的1/2左右。供试品种的苯丙氨酸解氨酶(PAL)和肉桂酸4—羟化酶(CA4H)活性变化是相伴随的。CA4H活性一般低于PAL的活性。福鼎和云南大叶的PAL和CA4H活性分别在8小时和12小时达到高峰。它们之间有4小时的时差,这可能是品种不同引起的。
During the process of natural withering of fresh young 3—leaf shoots of tea (Camellia sinensis ssp. )the phenylalanine ammonia lyase (PAL)activity's peak occurs at 12 hours after picking. In the increase of the PAL activity Fuding's is the highest 1.58 times higher than fresh leave. Yunnan Daye is the lowest, only by 1.28 times, but the PAL activity during the ferment ation only about half of that in fresh leaves.
The activity of PAL and cinnamic acid 4—hydroxylase (CA4H)changes synchronously. The activity of CA4H is generally lower than that of PAL. The activity peak of CA4H and PAL occurs at 8 shours in Fuding and at 12 hours in Ynunan Daye. There is a time defference between the two varietis. This differ ence perhaps is due to the varietyies.
