摘要 [目的]了解氮素运筹对中筋小麦淀粉合成调控的效应,为专用小麦优质、高产、高效栽培提供措施依据。[方法]以优质中筋小麦扬麦10号为材料,测定不同氮素运筹下小麦籽粒中淀粉含量以及小麦面粉的黏度特性。[结果]低氮水平下,直链淀粉、支链淀粉、总淀粉含量、积累量和积累速率均呈上升趋势;氮肥施用后移,直链淀粉、支链淀粉、总淀粉含量下降,但积累量和积累速率上升。[结论]中筋小麦栽培应降低总氮肥施用量,控制中后期施氮量并使氮肥后移。 [ Objective ] The technical basis of the good quality, high yield and high efficiency cultivation of special usage wheat was provided through the research on the nitrogen-fertilizing regulating starch synthesis of middle gluten wheat. [Method]The character such as the content of starch in stem and grain and the flour viscosity of wheat variety--Yangmal No. 10,which was good-quality and gluten species as experimental ma- terial under different nitrogen application ,was measured. [ Results ] Under low nitrogen level, the content, the accumulation amount and the accu- mulation rate of amylose, amylopectin and total starch in the wheat variety showed an upward trend. The content of amylose, amylopectin and total starch in the variety was decreased and the accumulation amount and the accumulation rate of them were raised after nitrogen-fertilizing. [ Con- clusion ] The cultivation of wheat gluten should reduce the total nitrogen fertilizer,and to control the amount of nitrogen fertilizer in the late after the shift.
