摘要
滇西南地区是云南省著名的优质米生产基地,以毫木西为代表的遮放米,以含低直链淀粉、具高胶稠度的籼型软米而驰名。笔者采集该区20件精米样品,查出大米所含20种无机微量元素。本文从这些微量元素的含量特征研究入手,探索它们相互间的关系及其与蛋白质、胶稠度的相关特征,证明了大米的蛋白质含量与Al、Si、P和微量元素总量间,胶稠度与Mg含量间呈负相关关系,建立了相应的回归函数式。同时指出这可能与大米生长的土壤环境有关。
The Southwest Yunnan region is the famous production base of the high-quality rice of Yunnan, in which the Haomuxi, a representative cultivar of Zhefang Hsien rice, is known widely for its characteristics of soft long-grain, low linear chain amylum and high gelatinous thickness. We hare collected 20 specimen of high milled rice in this region and determined 20 inorganic trace elements of the rice by podzolizing in 1983-1989. In basis of study on the content of trace elements, this article probes into the relation of trace elements one another and the correlation among trace elements, protein and gelatinous thickness. Results showed that the negative correlation was presented between the protein and A1, Si, P, or total trace element content as was also demonstrated between the gelatinous thickness and the Mg concentration. The regression function was setting up These characteristics may be related to the soil environment of the rice growing.
